Grilled Pork Ribs with Tiger Skin Quail Eggs

I bought pork chops from the supermarket. We soaked it in bleeding water, washed it repeatedly, put it in a pot with cold water, added cooking wine and blanch it.

Boil the quail eggs, remove the shells and set aside.

Put oil in the pot, add quail eggs to 50% oil temperature.

Turn on high heat and fry the tiger skin till it looks like it.

Remove the fried quail eggs and set aside.

Leave oil at the bottom of the pan. Add onion, ginger and garlic and stir-fry until fragrant.

Add the blanched pork ribs. Fry out excess moisture from the ribs.

Add Pixian bean paste.

Add light soy sauce and dark soy sauce. Quickly stir-fry evenly.

Pour in the stock just enough to cover the ribs. Bring to a boil over high heat.

Add sugar and five-spice powder, reduce heat and simmer for an hour.

Don’t forget to stir halfway through to avoid burning the pot.

Turn on high heat. Add oyster sauce.

Reduce the juice over high heat, add the fried quail eggs and stir-fry evenly.

When the soup is almost reduced, add the chicken essence.
