Remove the gills, scales and belly of the yellow croaker and wash them clean; cut the green onion into sections and slice the ginger and set aside.

Pour oil into the pot (more oil than cooking oil). Dry the fish with paper and apply dry starch on it. When the oil is hot, put it in a pan and fry it.

Fry until golden brown on both sides

Add onions, ginger, and aniseed, stir-fry until fragrant, then pour in cooking wine, dark soy sauce, and light soy sauce.

Put a bowl of water, salt and sugar to taste. After the water boils, simmer for 10 minutes, then remove from the pot and serve.
