Cut the potatoes and beef into dice cubes, mince the onion and ginger, cut the coriander into sections, and shred the pepper.

Remove stems from tomatoes and slice into slices.

Heat oil in a pan, add onion and ginger and sauté until fragrant.

Add beef and stir-fry.

Add potatoes and stir-fry until lightly browned.

Add the tomatoes, sprinkle with salt and stir-fry to release the juice as quickly as possible.

Add a little water, bring to a boil over high heat, then turn to low heat.

When the potatoes are cooked, add coriander and pepper, stir and serve.

Serve it out and eat.
