Vegetarian stir-fried eggplant
Overview
I usually cut eggplants into strips when cooking. This is my first time cutting them into cubes and frying them. It’s okay to occasionally change the shape of the same ingredients. Eggplant is rich in nutrients and contains protein, fat, carbohydrates, vitamins, calcium, phosphorus, iron and other nutrients. In particular, the content of vitamin P is very high, with 750 mg of vitamin P per 100 grams, which is beyond the reach of many vegetables and fruits.

Wash and cut the eggplant into cubes, marinate with a little salt and squeeze out the water
