Almond Cake
Overview
This is my first time making this almond cake. It’s so delicious. I highly recommend it. During the roasting process, the house is filled with aroma.

Put all ingredients A (90g whole eggs, 30g egg yolks, 65g superfine almond flour, 50g sugar) into a bowl and mix evenly;

Use an electric mixer to beat the sugar until the sugar melts, becomes larger in volume, turns white in color, and becomes a thick paste;

Ingredients B (50 grams of egg whites, 40 grams of sugar, a little lemon juice, a little salt), add a little lemon juice and salt to the egg whites, add sugar in two batches, and beat until stiff peaks form;

Take some of the egg whites and mix them with ingredient A, then pour in the remaining egg whites and mix evenly;

In ingredient C, sift the high and low flour, then sift into the egg batter, mix evenly;

Slowly pour the melted butter into the batter and mix evenly;

Pour into the mold and gently shake out the air bubbles;

Place in the preheated Changdi BakemanCRTF32K oven at 170 degrees for 23 minutes.
