  1. Thaw chicken gizzards and cut into slices. (Don’t make it too thin, because the chicken gizzards shrink a lot, about 2-3 mm thick is more appropriate.)

  3. Cut the millet pepper into small dices (if you like spicy food, choose millet spicy as shown in the picture. If you don’t like spicy food, you can choose thin pepper. But this dish is still more delicious if it is spicy, so the first choice is millet spicy!)

  4. Cut the ginger into small slices (it is more tasty, and the spiciness is too cold. Cut the ginger into small pieces and eat them together to neutralize it)

  5. Heat the oil in the pot. The amount of oil is slightly too much, because the chicken gizzards themselves have little fat. Too little oil will make it easy to stir-fry. When the oil is hot, add chicken gizzards, add a spoonful of cooking wine, and stir-fry over high heat. You will see as shown in the picture that more water has been analyzed. It doesn't matter. Just stir fry patiently.

  6. Stir-fry over high heat until the water in the pot evaporates and the oil becomes clear again. (You must be patient and fry until the oil is clear)

  7. After the oil is clear, turn down the heat to a minimum, add Sichuan peppercorns and white pepper, add onions, ginger, garlic and chili peppers, turn up the heat and stir-fry again. During this period, you can add water in small amounts and many times to ensure the freshness of the ingredients. Stir-fry for a while and when the ingredients are cooked, add chicken powder and light soy sauce to taste and serve.
