Chop the pork into minced meat (one-third fat and seven-thirds lean), add green onion, ginger, cooking wine, salt and season to taste and set aside. I don't like to use MSG or chicken essence, so I add an egg to the meat filling.

Cut the eggplant into large pieces and mark it with a knife. Do not cut it too deep as it will fall apart easily. Make four marks on each piece (depending on the size of the eggplant).

Pour oil into the pot and fry the eggplants thoroughly. The eggplants should be fried with more oil. When the eggplants are put into the pot, fry them with the meat side down first so they don't fall apart easily. Fry both sides until they come out of the pot.

Remove the oil control.

Leave a little oil in the pot, add garlic and sauté until fragrant, add fried eggplant, season with cooking wine, soy sauce, sugar and salt, add a small amount of water, stir gently, wait until the soup thickens and serve.
