Dragon fruit mousse cake

Take a mold base that is one size smaller than the mousse mold and use a knife to cut out a round cake piece along the edge of the mold.

Place the cake slices into the center of the 6-inch mold.

Wrap the bottom of the mold tightly with tin foil to avoid leakage.

Soak gelatine sheets in cold water until soft.

Put the soaked gelatine sheets into a small bowl and melt over hot water until it becomes liquid.

Use a blender to blend the red pitaya pulp into pitaya puree.

Pour the gelatin liquid into the pitaya puree and stir evenly.

Add sugar to the whipping cream and beat with an electric egg beater until 7 times even and slightly flowing.

Pour the dragon fruit liquid into the cream and mix thoroughly with a rubber spatula to form a mousse liquid.

Pour the mousse liquid into the mold, tap out any bubbles, and refrigerate until solid.

Finally, take it out, garnish with grapes, and sprinkle with powdered sugar.
