Braised big head sea fish
Overview
This is a kind of sea fish. It looks very similar to a flatfish, but I'm not sure. Because I only remember that when I bought it, the boss called it Big Head Fish, so I don’t know what its scientific name is.

Clean the fish and make a few cuts on the fish.

Spread the salt evenly over the fish and marinate for about an hour.

Prepare ingredients (ginger; garlic; dried onions).

Heat oil in a pan and fry the fish.

Fry both sides until slightly brown, add all ingredients and stir-fry until fragrant.

Then add the prepared sauce (rice wine; soy sauce; balsamic vinegar; water and mix well), cover the pot and simmer over high heat for a few minutes, then turn to low heat and simmer.

When there is a small amount of water left in the boil, add an appropriate amount of corn starch and gravy, continue to boil and mix well.
