Prepare ingredients as shown. Cut the eggplant into hob cubes, mince the onion, ginger and garlic, and cut the coriander and dried chili into sections.

Chop the pork into minced meat, add cooking wine, salt, a little pepper, a little water, and stir clockwise evenly.

Heat the pan with cold oil, add the minced meat and stir-fry.

When the minced meat is fried and fragrant, spray in a little dark soy sauce, stir-fry evenly, and set aside.

Put the pot back on, and when the oil is 80% hot, add the eggplant and stir-fry. When the eggplant is soft, add the fried minced meat.

Add 1 tsp garlic chili sauce and 2 tbsp light soy sauce, stir-fry until fragrant, then add a little hot water along the edge of the pot, add a little salt, dried chili pepper, and coriander root. Add 1 tsp of sesame oil before serving.

Remove from the pot and serve on a plate, garnish with a few coriander leaves.
