Overview

Prepare all the ingredients, blanch the clams in water, remove the shells and wash them. Dice the green pepper, dice the garlic, and cut the ginger and green onion into small pieces.

Heat the pan with cold oil, put the green pepper, ginger and garlic into the oil pan and stir-fry over low heat.

Add clam meat. Stir-fry twice, add old wine, light soy sauce, vinegar, oyster sauce, and chili sauce in sequence, and stir-fry for 3 minutes.

When the water in the pot is basically dry (the clams themselves will release some water), turn off the heat and add the chives and mix well.
