After teaching my sister how to make a simple version of soy beef last time and getting a good response, my sister has been asking me to try making some simple dishes again, and this is one of them.

  1. Clean the purchased chicken

  2. Boil a pot of water, add sliced ginger and scallions, and cook for a while. Then put the washed chicken into the pot and blanch it for two minutes until the skin shrinks. Take the chicken out and run it under cold water. The water in the pot continues to boil. Then throw the washed chicken into the pot again, cover the pot, and turn off the heat. Let the remaining heat of the boiling water simmer the chicken until it is cooked. It will take about twenty minutes. The time varies depending on the size of the chicken and the pot. I forgot to take pictures of this process.

  3. Remove the water and use a fan to dry the skin

  4. While the chicken is drying, cut the chili peppers, green onions and sand ginger into small pieces. Heat the oil and pour it over. Add an appropriate amount of salt and light soy sauce to make a dipping sauce

  5. Cut the chicken with the skin dried and place it on a plate

  6. With pumpkin porridge, old noodle steamed buns, cold jellyfish, cucumber and preserved eggs, you can have a good meal in the hot summer.
