Overview
Qiaozuibai is also called Baitiaoyu and Qiaobai. I saw some very fresh ones at the market today and they were not big in size, so I bought them and steamed them at noon. It seems that Shiyan, Hubei Province is the main production area and belongs to Jiangxian.

Wash the fish you bought and cut it with a flower knife on both sides.

Add appropriate amount of salt, cooking wine and pepper. When marinating fish, I usually don’t use onions and ginger because I think it doesn’t add in the flavor.

Before steaming, drizzle some salad oil under the fish plate, spread ginger slices and shredded green onions, put the fish on top, and put some shredded green onions and ginger slices on the back of the fish. Once it’s done, it’s ready to be steamed.

Steam for eight minutes, then turn off the heat and simmer for a while. At this time, heat the oil in the wok. This is after it's out of the pot. You can add some shredded green onions.
