Fried potatoes with chives
Overview
Potatoes are called potatoes in Yunnan, and potatoes are a favorite food of the public. I like to eat small potatoes. They are delicious when cooked with the skin on, peeled and flattened, or made into soup or stir-fried. These scallion potatoes are soft, glutinous and spicy with the aroma of scallions and are perfect for rice.

Wash the small potatoes and cook them in a pot. Let them cool and then peel off the skins.

Place the peeled small potatoes on the chopping board and flatten them into a cake shape with the back of a knife.

Peel and chop the garlic, and chop the chives into chopped green onions.

Heat the wok, pour in cooking oil and heat, add potato pancakes and fry over medium-low heat until both sides are slightly brown, then serve.
