Braised seabass
Overview
The sea bass at the market yesterday cost 15 yuan a pound. I bought one for 15.8 yuan and the boss charged me 15 yuan. When the boss wife saw that the boss had wiped out all the leftovers from several people, she started to nag impatiently. There was no old soy sauce at home, and I felt that I was embarrassed to order braised fish without some old soy sauce.

After cleaning the bass, cut off the fins and cut the back of the fish with a knife.

Pour oil into the pot, add a little salt and ginger slices to the pot.

When the oil is hot, add the seabass.

Fry the seabass until browned on both sides (I took off the fish’s clothes)

Add balsamic vinegar and light soy sauce to the salt.

Pour in appropriate amount of water and garlic, cover and cook.

Don't let the soup in the pot dry up (the fish tastes better when soaked in the soup). It will be more beautiful if you add some dark soy sauce to color it.

Sprinkling chopped green onion before serving can also add a little sugar to enhance the flavor.
