Prepare the chopped peanuts: Place the peanuts in a preheated baking pan, bake at 180 degrees for about seven or eight minutes. The specific time depends on the size of the peanuts and the characteristics of your own oven. Let the roasted peanuts cool, peel them, place them in a ziplock bag and crush them with a rolling pin. Set aside.

Cut red pepper, green pepper, and coriander into fine pieces and set aside.

Open the lactone tofu and score the edge with a knife so that the tofu can be poured out easily.

Use a knife to lightly cut the lactone tofu into small pieces and place them in the middle of the plate.

Peel and clean the preserved eggs, dip a knife in water and cut into small pieces.

Arrange the sliced preserved eggs around the tofu.

Sprinkle red pepper, green pepper, coriander, and chopped peanuts on top of the tofu.

Sauce: Put appropriate amount of fresh soy sauce, mature vinegar, sesame oil and salt into a bowl and stir evenly.

Pour the prepared juice into the plate and finish.
