Remove the internal organs of the snakehead fish, wash it, and fillet the fish. (Fish heads, tails and bones can be stewed with tofu, don’t throw them away)

Use a knife to cut the fish diagonally into pieces

Wash and cut lettuce into sections

Wash the enoki mushrooms and remove the roots

Remove stems from shiitake mushrooms, wash and set aside

Peel and slice fresh bamboo shoots

Score a cross on the surface of the tomatoes and add them to the boiling water.

Peel the skin off the tomatoes.

Use a food processor to puree the tomatoes

Pour an appropriate amount of oil into the pot, heat until it is 60% hot, then add green onions and peppercorns and saute until fragrant

Pour in the tomato puree and stir-fry evenly

Add a spoonful of sugar

Add appropriate amount of water and salt to taste and serve as hot pot soup base
