Stir-fried Silver Needle Noodles with Onions and Sesame (Gray Fetus)
Overview
The silver needle powder looks plump, with pointed ends, and is very elastic to bite. It is quickly stir-fried with other vegetarian dishes over high heat. The fried finished product is filled with the aroma of soy sauce and wok gas. It really makes people surrender immediately, and they don't know how much they eat. Firstly, I am worried that the shelf life of the silver needle powder on the market has expired, and secondly, I am worried that it is unhygienic, so I always make the silver needle powder by myself.

Steps
-
Slowly add the boiling water to the rice rolls and knead it into a smooth dough (I use a bread machine to knead the dough). The boiling water must be added little by little, do not add too much at once. For rice rolls, I use White Shark brand rice roll special powder, which is sold on a certain website.

Brush the steaming pot with a layer of peanut oil to prevent sticking. Divide the dough into small, even balls. Roll them into round balls and then knead them into a round shape with two pointed ends and a fat center.
-
Brush a layer of peanut oil on top of each layer of silver needle powder to prevent the silver needle powder from sticking together.
-
Boil a pot of water. After the water boils, put the silver needle powder in the pot and steam it for 25 minutes.
-
The freshly baked Silver Needle Powder is crystal clear and chubby, with a bit of a cute feel.
-
Let it dry until it is no longer hot to your hands, then spread out the silver needle powder in strips
-
Heat the wok, add peanut oil, pour in the silver needle powder and stir-fry, add soy sauce and oil and stir-fry until brown, add shredded onions and carrots, stir-fry until raw, finally sprinkle in cooked sesame seeds and it's OK
