Potato and Sausage Braised Rice

During the summer, I brought my own mini rice cooker to work and cooked rice with potatoes and sausages several times. At that time, I didn't have the conditions to stir-fry potatoes or sausages in advance. I just cut the ingredients and threw them into the pot. I didn't add any seasonings when cooking. When it came out of the pot, I poured some sushi soy sauce and added some pickled mustard. The function of the rice cooker is very simple. It only has two functions: keeping warm and cooking rice. It can be cooked in basically half an hour. A delicious lunch is that simple.

  1. Ingredients are for two people. Prepare 300 grams of rice, half a potato, a Cantonese sausage, two mushrooms, an appropriate amount of dried shrimps, and a few green onions.

  2. Soak the mushrooms and shred them, slice the sausage, peel and cut the potatoes into cubes. Chop green onions and set aside.

  3. Pour the sausage into the pan, stir-fry a little to remove the oil, then add the potatoes and mushrooms, and continue to stir-fry. The potatoes do not need to be completely cooked.

  4. Add an appropriate amount of water to the washed rice, spread the fried potato sausage evenly in the pot, sprinkle with sea rice, and pour in an appropriate amount of light soy sauce.

  5. After half an hour, the rice is cooked. Open the lid and sprinkle with minced green onion. Close the lid and continue to simmer for ten minutes.

  6. After simmering, mix the rice with a rice spoon.

  7. Serve it out. If it feels bland, add more soy sauce.
