Ingredients: 1000g coriander, 3 lemons, 1 sake, 2 tablespoons garlic, 2 ginger, 1 piece of butter, 20g

Put the clams you bought back in a big bowl

Add tap water to cover the surface, and then put in an iron spoon/iron nail to make it easier to spit out sand and excrement.

Let it soak for about 15-20 minutes, so that everyone can see how much dirt has been spit out. After taking out the clams, rinse them again and they'll be fine.

Regarding the lemon peel, it is recommended that you rub the surface with baking soda or coarse salt to remove the wax on the surface.

Put the patted garlic, ginger, and coriander heads into the casserole, and then grate the lemon zest (yellow part). If you like spicy food, you can add 1-2 chilli padi.

Add the rinsed clams.

Pour in 2 tablespoons more sake. Then you can cover it and cook over high heat.

After cooking for about 8 minutes, most of the clams will have opened.

This is to which we add a small knob of butter (unsalted), the juice of half a lemon and a little sugar.

Sprinkle with chopped coriander, turn off the heat, cover and simmer for 1-2 minutes, then serve.
