Peel and dice the lotus root, soak in water and set aside. Chop green onions and dry chilies into sections. Take another small bowl, add 1 spoon of light soy sauce, 2 spoons of vinegar, 1 spoon of sugar, and 1 spoon of cooking wine and stir evenly.

Pour oil into the pot, add peppercorns and fry over low heat until brown and black, remove.

Add chopped green onion and dried chili and stir-fry over low heat until fragrant.

Turn up the heat, add the diced lotus root and stir-fry for about 1 minute. Add salt and stir-fry evenly.

Pour in the prepared sauce and stir-fry over high heat until the soup thickens.

Remove from pan and plate.
