Overview

I didn't use a clay pot or ceramic pot today, I used a medical stone pot. It is said that the wall and bottom of the medical stone pot have several layers. It has good heat preservation function and is easy to wash. From time to time, I will use it to make soup. The author used bitter melon and pork ribs for the Jingjian soup. A colleague once told me that when her husband got angry, she would make watermelon and soybean soup.

  1. Put the frozen spareribs at room temperature into a large bowl with almost no surface of water. Add 1/2 tablespoon of refined salt, stir a few times, and let stand for 20 minutes. Use salt water to force out the snowy smell and blood water.

  2. When using a pressure cooker, it is best to boil the hard-to-cook ingredients first, then add dried cucumbers, soybeans and candied dates into the cooker and cook for 20 minutes.

  3. Rinse the ribs and cut them into pieces between the bones. Add a pot of cold water, add 5 slices of ginger, and turn on medium heat.

  4. After the water boils, cook until large foam forms. Remove the ribs and rinse with hot water and set aside.

  5. When the ingredients in the pressure cooker are cooked, pour them all into the medical stone pot, add the ribs and 5 slices of ginger.

  6. Turn on high heat, then reduce to low heat after the water boils, and simmer for about 30 to 40 minutes to remove the flavor and soften the pork ribs.

Then cut the bitter melon into large pieces, leaving the ripe seeds, but not digging out the raw ones, then put it into a pot, bring the soup to a boil, cover the pot, and simmer over medium-low heat for 10 to 15 minutes until the bitter melon turns yellow and the soup is ready. Add a little salt to enhance the flavor when enjoying.
