Grilled Chicken Wings with Chives
Overview
This recipe was inspired by Chef Aji's Braised Tofu with Green Onions. I followed his video and made the Braised Tofu with Chives. It was very successful, so I wanted to expand it a bit and thought of chicken wings. After practice, the effect was quite good. It is easy to make, economical and does not require many complicated processes and expensive ingredients. It is an ordinary people's dish that shows the warm taste of home and is loved by the family. Note: The large spoons, small spoons and cups used in this blog are all standard measuring spoons, not the tablespoons and teaspoons used at meals.

Cut the chicken wings into pieces, make 2 knives on the back of each piece as deep as the bone, add 1 tablespoon of light soy sauce, 1/4 teaspoon of pepper, and 1 tablespoon of cooking wine. Grip it evenly with your hands and let it rest for 30 minutes or place it in a dense box in the refrigerator overnight;

Cut off the green onions, put cold oil in a cold pan, then raise the heat to medium and sauté the green onions until the green onions turn slightly charred, then turn off the heat;

Pour up the oil and green onions separately. Look, the oil has turned light green and the green onions are fragrant;

Put the surface of the chicken wings into the pot first, until both sides are golden brown;

Fry the other side until golden brown;

Then fry the chicken legs on both sides until golden brown;

Add the chicken wings into the pot and add hot water to almost cover the chicken wing noodles. Add 2 tablespoons of light soy sauce, 1/2 teaspoon of sugar, 1/2 teaspoon of pepper, and 1/8 teaspoon of salt. Bring to a boil over high heat to reduce the juice;

When the juice is reduced to about 1/4 of its original size, add the stir-fried green onions, stir or shake the pan a few times, taste it, add about 2 tsp of sesame oil, shake the pan or stir a few more times, take it out of the pan, put it on a plate, and enjoy while hot.
