Fried soybeans with pickles
Overview
Fried soybeans with pickles is a simple and convenient side dish that goes well with rice, porridge, and steamed buns. I use mustard greens that I pickled myself. You can buy ready-made ones. The pickles should not be too salty. It is recommended to wash them several times with cold water before frying.

Prepare the auxiliary ingredients and soak the soybeans in advance.

Boil water and add cinnamon and Sichuan peppercorns. Because I don’t like to eat aniseed, I didn’t add it. Friends who like it can add it.

Boil the water and cook for 5 minutes to season. You can remove the peppercorns. If you like to eat peppercorns, you don’t need to remove them.

Put the soybeans into the pepper and cinnamon water, cook for 7-8 minutes, turn off the heat and take out.

Put oil in the pot, add the meat filling and minced ginger and stir-fry until cooked.

Add soybeans and appropriate amount of salt, use oil and light soy sauce and stir-fry. When adding the soybeans, you can add a little more water for soaking the soybeans. The soybeans will become softer when fried in soup.

Finally, add shredded mustard greens, add vinegar and stir-fry for 1-2 minutes before serving.
