Fry the peanuts over low heat until cooked

Cool and remove the outer skin of the peanut kernels. Chop it into pieces with a knife

Boil water and blanch peas and carrots

Remove and set aside

Put oil in the pot, add corn kernels and stir-fry over high heat for half a minute

Add the blanched peas and carrots, stir-fry evenly

Add salt and sugar and stir-fry evenly

Add in the chopped peanuts and stir-fry evenly, turn off the heat and add chicken essence

Remove from pan and plate
