Stir-fried bacon with Hangzhou pepper
Overview
Bacon and sausages are unforgettable memories for us southerners in winter. Different from the smoked bacon in Hunan and Yunnan-Guizhou areas, they are directly dried and preserved after being cured and have a pure salty flavor. Although some experts now believe that salty foods are not nutritious and it is better to eat less; in addition, young people nowadays hardly eat salty foods. (We, the boy, never touched a bite), but every year before and after the heavy snowfall, I still stuff some sausages and pickle some bacon according to the old tradition; whether it is boiled, steamed, stir-fried, or boiled, it is very delicious and can be eaten with rice; commemorating the old taste~is something that our generation cannot forget~~~
