Gastrodia stewed fish head

Prepare the ingredients, except southern dates and longan, soak all others for half an hour.

Flatten the ginger with a knife and boil it with 2 liters of cold water. Rinse the soaked medicinal materials, including jujube and longan, and continue to simmer in boiling water.

Wash and drain the big fish head (big fish head has this thing inside, we Cantonese call it Yuyun), fry it in oil (just roll it and fry it, don't split it, the brains and stuff inside are the good stuff), when it's browned, put it into the medicinal soup and cook it on medium heat for an hour and a half. For the last ten minutes, add a little salt to taste and turn up the heat. Turn off the heat after ten minutes.

After cooking, scoop it up and drink it while it's hot (because after cooking for an hour and a half, the fish head has rotted away, and you can only see the dregs... haha).
