Remove the bones from 3 chicken legs and chop into larger pieces

Remove stems from shiitake mushrooms, rinse and cut into pieces

Slice ginger and garlic, cut green onion into sections

Blanch the chicken pieces in a pot and drain out the water

Add oil to the pot, add ginger slices and garlic slices and saute over low heat until fragrant

Add the chicken pieces and stir-fry over low heat for a minute

Add appropriate amount of water, two spoons of light soy sauce and one spoon of oyster sauce into the pot at one time, bring to a boil, cover and simmer over low heat for eight minutes

After eight minutes, open the lid, add the mushrooms and simmer for two minutes
