Walnut Bun
Overview
People who like baking always like to try different recipes. I fell in love with Mr. Junzi's walnut bread at first sight, but I made a few changes. This bread can be said to be green bread, with less sugar and butter, and walnut kernels added. Every bite has a strong walnut flavor. Paired with a glass of milk, it is a very good breakfast.

Place the walnut kernels in the middle rack of a preheated 170°C oven and bake for 8-10 minutes until golden brown. After the roasted walnut kernels cool, divide them into two even portions. Chop one portion into small pieces and the other portion into powder

Put all the dough ingredients except butter together, knead to the expansion stage, add chopped walnuts to the dough with 4 minutes left in the first program of the bread machine, and continue kneading

After the first program is completed, add butter and walnut pieces and continue kneading until the dough is fully kneaded

Place the kneaded dough in the bread machine for basic fermentation

Let the dough ferment until it doubles in size

After fermenting the dough, use your palms to press out the air. Divide the dough into 6 parts, roll them into balls, cover them with plastic wrap and let them rise for 15 minutes

Take a small piece of dough and place it on the counter, flatten it with the palm of your hand, then use a rolling pin to roll it out into an oval shape

Roll the rolled out oval-shaped dough from top to bottom. Roll it up in the middle and roll it all the way to the bottom. Pinch the edge tightly to form an olive shape with a large center and small ends.

Place the shaped olive-shaped dough on the baking sheet for final fermentation

Let the dough ferment until it doubles in size. After it has doubled in size, use a knife to make three diagonal cuts on the surface of the dough. Place it in a preheated oven at 200°C and bake for about 12 minutes until the surface is golden brown.
