Fried rice cake with river crab
Overview
My husband went fishing early Saturday morning and brought back three crabs in the afternoon. Another one ran away in the evening, and the remaining two crabs had to be fried rice cakes.

Use a brush to clean the crabs.

Uncover the crab shell, remove the crab gills, and cut into two pieces.

Slice the rice cake and break it apart.

Add a little more oil to the pot than usual for cooking. When the oil is hot, add the crab pieces and stir-fry. Add onions, ginger, and cooking wine to remove the fishy smell.

Pour in the rice cake, add water and bring to a boil over high heat, then reduce to low heat.

Add sugar, soybean extract, and chicken essence and stir-fry until the rice cake is soft and glutinous and the soup is rich, then serve on a plate.
