Remove the internal organs from the hairtail fish and cut into sections, add flour.

Shake the hairtail fish to coat evenly with flour.

Slice ginger and garlic, and chop green onions.

Add vegetable oil to the pot and fry the hairtail fish.

Fry the hairtail until both sides are golden brown, add cooking wine, light soy sauce and dark soy sauce.
