Overview

Last week, I planned to have a dinner with my classmates on Saturday. Some classmates said they wanted to eat the dishes I cooked because the brine can be taken away and it is not afraid of the cold, so I got up early in the morning and went to the market to scan the goods. If the pot at home is not big, I can only make these. People here like braised meat very much. Braised goose, braised duck, pig's feet, pork belly, and braised eggs are all delicious. You can try them yourself when you have time.

  1. Prepare pork trotters and pork belly

  2. Clean the large intestine, both front and back, and remove the oil inside so that it won't be too greasy. Use flour or cornstarch and salt to scrub it once, and then rub it again with peanut oil.

  3. Pick up the rice intestines from the water and set aside. Use your fingers to pinch and feel if there are any bones inside (if there are worms in the rice intestines, we call them bones, which doesn’t sound so scary). Haha, if there are bones, rinse them out with water. If not, don’t rinse them with water, because the powder inside the rice intestines is very fragrant

  4. Wash the pig belly and set aside. This time, add pepper and simmer for an hour and a half. Then let it cool and use half of it for cold dressing. Add half to the soup and add pickles to make a pickle and pork belly soup. I forgot to take a photo.

  5. Blanch the pork belly in boiling water, then fry it in a pan until golden brown on both sides, remove and set aside

  6. Boil the pig's trotters in boiling water, wash them, pick them up, dry them, and deep-fry them in a pan. If they get some oil, they won't be greasy. The same goes for pork belly

  7. Dried beans and soaked in water, do not cut into whole pieces

  8. Place ginger slices on the bottom of the pot, green onion as the lead, and coriander as the lead (grandpa said this will give it more flavor)

  10. Put the pig's feet in, then put the pork belly on top, put the marinade in a mesh bag, add water, soy sauce, dark soy sauce, sugar, the water should cover the meat, cover the lid and cook for half an hour

  11. After cooking for half an hour, remove the pork belly

  12. Add dried tofu and cook over medium heat for half an hour

Boil the washed large intestine in boiling water, put in another pot, use the same bottom ingredients, cook the large intestine for half an hour over medium heat, then add the vermicelli, cook for half an hour, pick up some for cold salad, add soy sauce, dark soy sauce, salt, sugar, marinade, cook over low heat for half an hour

  17. Pack the stewed soup into a bag, put some chopped green onion and coriander, seal the plate with plastic wrap, take it out to share with your classmates, hehe, it looks a bit much

  18. The dried beans were not marinated long enough, so they looked a bit white when cut into pieces. I ate this dish at home first.
