Overview
After trying it many times, I found that the ratio of eggs: salted eggs (cooked) is 1:1, which I like best! The salted egg white is responsible for the saltiness of the dish, and the egg is responsible for the aroma of the ingredients and scrambled eggs. Of course, a little more cured meat is the icing on the cake.

Prepare ingredients; cut king oyster mushrooms into long strips, cut sausage into small dices, and mince green garlic

Cut the salted egg in half, mince the white & yolk with a fork and scoop out

Break in a raw egg

Dry-fry the mushroom strips in a hot pan until slightly brown and slightly shrunk (no oil will prevent them from sticking to the pan), remove and set aside

Pan-fried diced sausage over low heat

Mix the eggs & salted eggs slightly (you don’t need to beat them evenly to create multiple layers)

Push the diced sausage to the edge of the pot, heat the pot and pour in the egg liquid, turn off the heat and let the egg liquid circle around the pot

Add the mushroom strips and mix well, turn up the heat and stir-fry until the egg liquid is solidified (cooked), add the garlic and sprinkle with black and white pepper, and remove from the pot.
