Pick 20 large field snails and raise them at least one day in advance so that they can spit out the sediment and wash them clean for later use.

Stuff the evenly mixed meat filling into the snail shells, and then cover the snails with the lid.

Heat the pan, add a little oil, add the onion, ginger, garlic and dried chili pepper segments, sauté until fragrant, add the snails, stir-fry briefly, add water and bring to a boil over high heat, add cooking wine, very fresh soy sauce, (if you like a strong color, you can add some dark soy sauce for color), add a little sugar to enhance the freshness, cover the lid and simmer over low heat for ten minutes.
