First open the back of the shrimp and take out the shrimp thread.

Season the shrimp with green onion, ginger and salt.

Blanch the shrimp until it curls.

Coat the blanched shrimps in starch batter and fry until golden brown.

Add a small amount of water to the pot and stir-fry the rock sugar, salt, and white sugar until shiny. Add orange juice and passion fruit, then thicken with water starch, then add the fried shrimps and stir-fry.

After the shrimps are coated with the sauce, remove from the pan and serve on a plate.
