Pan-fried noodle fish cake
Overview
Growing up by the sea, I heard and witnessed my fellow villagers fishing. In the early days, fishing tools were backward, and three types of fishing methods were commonly used: thin nets, long-distance nets and hanging sub-nets. Both thin nets and long-distance nets need to wait until the temperature of the valley rain rises and fish come ashore before going into the sea. The only way is to hang sub-nets and set up before the Spring Festival to make preparations for lowering the nets. Long bamboo poles are driven into the turbulent sea water, and the mesh is as dense as mosquito net cloth, and woven into long trumpet-shaped bags. The main objects of salvage are grasshopper shrimps as small as mosquitoes. After the Spring Festival, on the fifteenth day of the first lunar month, you can eat the first batch of seafood they harvest. Judging from the seafood caught, there are always a lot of noodles and fish. Some of these fish are caught alone in the net, and some are picked out from grasshoppers and shrimps. I just remember that the noodle fish is short and less than three inches long. The fish body is soft and transparent, with only two eyes and a few rows of small dots, which is eye-catching. The reason why it is called noodle fish is because when it is served in a basin, it looks like piled white noodles. Use it to stew tofu, hook eggs, or cook it plain. No matter how you eat it, it is delicious. The high-quality early seafood known as peach blossom shrimp (small shrimp) can only be released after the Grain Rain period and fishing with thin nets and long nets begins. Therefore, when it comes to the first fresh food after the beginning of spring, only noodle fish ranks first. I have eaten a lot of seafood, but I have never tasted it as the first fresh food in spring like noodle fish. Noodle fish is the common name of Weihai, and it is also called whitebait in Baidu. The full name of the whitebait that can be seen locally is Yangtze River whitebait. "Compendium of Materia Medica" gives this definition: Yangtze River whitebait, also known as short-snouted whitebait, belongs to the order Salmoniformes, Whitebaitidae, and genus Whitebait. Commonly known as: noodle fish, noodle fish, leftover fish. According to data, the Yangtze River whitebait is a small annual fish of the order Salmoniformes, classified in the family Whitebaitidae, with a total of 22 species in 8 genera. It is distributed in Japan, North Korea, Vietnam and China in eastern Asia, with my country having the most species. Among these 22 species of whitebait, the Yangtze River whitebait and Taihu new whitebait species are the most important ones with higher economic value and suitable for transplantation. The Yangtze River whitebait is mainly distributed along the coasts of the East China Sea, Yellow Sea, and Bohai Sea, as well as in the middle and lower reaches of the Yangtze River and Huaihe River and in lakes and reservoirs. It is an estuarine fish.
