Donkey rolling
Overview
Donkey Rolling is one of the traditional snacks in old Beijing and Tianjin. Because the soybean noodles sprinkled in the final production process are like the loess thrown up by wild donkeys rolling around in the suburbs of old Beijing, it is named Donkey Rolling. It is also very convenient to use a bread machine to make donkey rolls. Just add glutinous rice and water directly to make a very delicious glutinous rice dough. The outer layer of the finished donkey rolls is covered with bean flour and is golden yellow. The bean-flavored filling is sweet, soft in the mouth and has a unique flavor. It is a traditional snack suitable for all ages.

First make the soybean noodles. Wash the soybeans and put them into the bread machine to start the stir-frying process. After 45 minutes, the soybeans will be cooked and fragrant.

Put the soybeans into the wall breaking machine and stir for about 1 minute and 30 seconds. Beat the soybeans into a fine powder and set aside.

Soak the glutinous rice for about 3-4 hours in advance.

Drain the soaked glutinous rice, then add water again and put it into the bread machine. (The amount of water is for reference only. Adjust the amount of water according to the water absorption of the glutinous rice when soaking.)

Start the rice cake program of the bread machine. After the program ends, the glutinous rice dough will be ready. Cover the dough with plastic wrap and let it cool down to lukewarm temperature.

Sprinkle kneading mat with soy flour.

Put the lukewarm glutinous rice dough, sprinkle a layer of soybean flour on the glutinous rice surface, and flatten it.

The glutinous rice dough is topped with red bean paste filling.
