Steps
-
Chop the sperm into small pieces, soak in warm water for half an hour, drain the blood and wash.
-
Add ginger slices, green onion segments, appropriate amount of salt, cooking wine, pepper, 1 spoon of oyster sauce and a little sugar to the pork ribs and mix well.
-
Then add an appropriate amount of starch and 1 egg white, then add a few drops of sesame oil and mix well again.
-
Wrap in plastic wrap and refrigerate for two to three hours.
-
Pick out the green onions and ginger. Pour more oil into the pot and heat until cooked (slightly smoking), then reduce the heat to low and fry the ribs for about five minutes.
-
Fry the pork ribs until the surface is slightly brown, remove and drain.
-
Chop about 5 to 7 garlic cloves into fine pieces.
-
Heat the oil again until it is 80% to 90% hot, add the pork ribs, and fry over high heat for about 1 minute.
-
When both sides are golden, remove and drain. This step makes the surface of the ribs crispy.
-
Leave a little oil in the pot and sauté the minced garlic until fragrant.
-
When the minced garlic turns slightly brown, add a little cumin. If you like spicy food, you can also add chili noodles, pepper noodles, etc.
-
Turn off the heat, add the pork ribs and stir-fry evenly.
-
Just load it into a plate.
