Fish head and tofu soup
Overview
My friend got a big silver carp and gave it to me. The fish was so big that I made three separate dishes! Fish heads are good for braised, chopped peppers, and stewed in soup. I added tofu and seafood mushrooms to stew a pot of soup. It tastes very delicious. You can try it!

Kill the silver carp and clean it

The fish head is split from the back and divided into two

Remove the black film inside the fish head and clean it

Cut the tofu into small pieces and set aside

Remove the roots of seafood mushrooms and clean them

Boil water in a pot and blanch the tofu to remove the beany smell

Heat oil in another pan, fry the fish head until the inside is slightly brown, pour a little high-strength white wine on the side of the pan (it will evaporate to take away the fishy smell)

Pour enough boiling water, add ginger slices, green onion knots

Cook over high heat until the soup is thick and white, add tofu and turn to low heat

After boiling again, add seafood mushrooms

Add salt to taste and a little white pepper for freshness

Remove from pot and serve, sprinkle with coriander
