  1. Boil a pot of water, add a little cooking wine, add chicken pieces and blanch until raw. I usually use half a chicken and cut it into cubes. You can also cut chicken legs and wings into cubes. I used chicken wings in the step-by-step diagram.

  3. Add a little sesame oil, add ginger slices and fry until golden.

  4. Add garlic cloves and stir-fry until fragrant.

  5. Add the chicken wings and stir-fry until the skin is slightly golden.

  6. Add sugar and stir-fry to coat evenly.

  7. Add rice wine, soy sauce, and half of the sesame oil, stir-fry evenly, cover and simmer over low heat for about 20 minutes.

  8. Open the lid and reduce the juice over high heat. Add the nine-layer tower and sesame oil about 5 minutes in advance, stir-fry evenly, and wait until the soup thickens.
