Bacon Chive Pancake
Overview
I mainly focus on pasta in the morning on weekends, and I try to eat it in different ways. Two days ago, I saw a bag of bacon in the refrigerator, so I thought about using it to bake pies. As expected, I didn't expect it. The simplicity is so fragrant, I didn't want to take a bite of it. Not to brag, even those who are often picky can’t fault this cake. Dear friends, you must try it when you have time on the weekend!

Steps
-
Place the weighed flour in a clean basin, add 120 ml of boiling water and stir half of the flour into a loose form with chopsticks. Then add 100 ml of cold water and stir the remaining half of the dough into a loose form. Then knead the dough with your hands until it is "three smooth", namely surface light, pot light, and hand light. Sprinkle some dry flour on the surface of the kneaded dough, cover with plastic wrap and rest for 20 minutes.
-
Use the time when the dough is relaxing to chop the bacon and the scallions into small pieces. Heat oil in a pan, add the bacon and fry for about 1 minute. Turn off the heat, add the scallions and stir-fry evenly. Remove from the pan and set aside.
-
After the dough has rested, divide into small portions.
-
Take a piece of dough and roll it into a round shape (the thinner it is, the better the texture will be). Add a tablespoon of bacon chives.
-
Tie it up like a bun, then roll it out gently with the edge facing down.
-
Heat oil in a pan, turn on low heat, flip the pancake back and forth, and fry until both sides are golden brown. The delicious bacon pie is ready!
