Stir-fried king oyster mushrooms and mixed vegetables
Overview
Watching health-preserving programs often reminds us that our daily diet should be more colorful. You should see vegetables in black, white, red, green, and yellow in every meal, which are the most nutritious. Therefore, dishes such as carrots, peppers, and fungus are often prepared at my home. Sometimes they stir-fry chicken breasts, and sometimes they stir-fry meat slices. They are easy to match and have the nutrients of several colors. It is simple and convenient. I cooked braised pork ribs today, so I wanted to make a light dish, so I bought king oyster mushrooms to go with it. It’s also very nutritious

Soak the dried fungus and blanch it (soak for 1 to 2 hours, wash away the fine sand inside and blanch it)

Chili, carrots and rhombus slices, garlic diced

Pleurotus eryngii shred into strips by hand (can also be cut into diamond-shaped slices)

Pour oil into the pan and add the garlic

Add king oyster mushrooms. Some water will come out during the frying of king oyster mushrooms. Don’t worry about it. Continue the fire and the water will dry up

When the water is almost gone, add the chili pepper, sugar and salt to taste
