Overview
Braised pork is an essential dish for family dinners. The older generation had their own ways of doing things, so I just stood by and silently recorded them.

Wash the pork belly and cut into pieces.

After the water in the pot is boiled, pour in the pork belly water, take it out and rinse the foam on it with water.

Sauté the ginger and chili peppers with oil in the pot and add the water to the pork belly.

Stir fry evenly.

Add cooking wine and stir-fry.

Add two tablespoons of vinegar and stir-fry.

Add a little dark soy sauce and stir-fry.

Pour in appropriate amount of water (cold water added)

Do not cover the pot until it is boiling (this will evaporate part of the fishy smell of the meat)

Wait until the water in the pot is almost dry.

Add garlic.

Add water again and cover the pot and cook.

Add salt and stir-fry evenly.

Sprinkle a little sugar before serving.

Remove from pot and plate.
