When frying white sugar, mainly because there is no brown sugar, the non-stick pan should be set over medium heat. The frying function is about medium heat. It’s best to fry with water, as it won’t burn in a non-stick pan.

Fry until it turns into a red liquid.

Add meat and chestnuts.

Add dark soy sauce for coloring, half a spoon. Season with 3 tablespoons of light soy sauce and 1 tablespoon of cooking wine. I added 1 tablespoon of mirin for Japanese cooking. If the taste is bland, add light soy sauce. Cover the pot and simmer over low heat for 20 to 30 minutes.
