Fried Vegetarian Carrot Meatballs
Overview
Every New Year's Eve night, our family has to fry some New Year's goods, such as meatballs, sesame leaves, fish, chicken... My favorite is fried vegetarian radish meatballs. Watching my mother busy chopping and mixing the fillings, and finally squeezing out the ball bases one by one and putting them into the oil pan. Then each ball floated with bubbles and slowly turned golden. My mother would pick up the balls with a picket, pinch a ball with her hands, blow it with her mouth, and stuff it into my mouth, saying: Be careful, don’t burn it! I would stand next to my mother, while she fried them, and I ate...the vegetable radish balls that were crispy on the outside and tender on the inside became particularly delicious after passing through my mother's hands. I couldn't get enough of them~ To this day, whenever I see my mother's fried balls, I feel particularly warm, as if I have returned to my childhood.

Wash all ingredients and set aside

Grate the white radish and carrot into thin strips and then chop them into pieces. Chop the soybean sprouts and green onions. Crush the soft tofu into pieces with your hands. Put them all into a basin and add seasonings

Marinate for 10 minutes to taste

Heat enough oil in the wok until it is 50% or 60% hot, then add the meatballs (fry slowly over medium-low heat, otherwise the outside will be burnt but the inside will still be raw)

Just use the technique of squeezing out from the tiger's mouth as shown in the picture to lower them into the oil pan one by one (for the convenience of taking pictures, my mother personally acted as a model for me)
