Soak white glutinous rice and black rice 10 hours in advance, lay clean gauze or steamer cloth on the steamer, and put the soaked rice in.

Add enough water to the steamer and steam for 40 minutes.

Pour the boiling water into the flour slowly, stirring with chopsticks while pouring, until it forms a fluffy consistency.

Cool until not hot, knead it into a smooth dough and let it rest for 15 minutes.

Soak the mushrooms 2 hours in advance and mince them.

Cut ham into small cubes.

When the oil in the pan is hot, add ham and mushrooms and saute until fragrant.

Pour in the steamed glutinous rice flour and season with salt, sugar and light soy sauce.

Roll out the rested dough into a dough about 10 cm in diameter.

Put the glutinous rice into the dough. Use chopsticks to compact it and pinch it close to the opening, but do not completely seal the opening.

Place the wrapped siomai into a steamer and steam for 15 minutes.

If you can’t finish it all at once, you can pack it in a plastic bag and store it in the refrigerator.
