I choose large green peppers, which are not spicy at all. Wash the peppers and ginger and set aside for later use

Wash the squid, separate the head, and pull out the transparent cartilage inside the squid. If you want to keep the head, use a knife to draw a straight line for the two eyes. After cleaning the squid, put some cooking wine in it, grab it with your hands a few times, and marinate it for 2 minutes to remove the fishy smell.
