Double Flavor Caterpillar Bread
Overview
I used to like caterpillar bread from cake shops, but this time I finally got the courage to try it myself. It was my first time making it, but the shape wasn’t very good. I’ll have to work harder next time. This time, I followed Jun's recipe. Fortunately, it was finally done. Although it wasn't very beautiful, it was still a success. Fat caterpillar bread, cut into pieces and enjoy! Because my son loves durian so much, I just opened one at home and made durian flavored one. I guess some people may find it difficult to accept the taste. I also made the blueberry flavor and both flavors were great. The fillings can also be freely used according to personal preference. A cute caterpillar bread. I will try it sometime next time and try to make it more beautiful.

Place all ingredients except butter into a basin.

Use chopsticks to stir into snowflakes.

Knead into a smooth dough, add butter, and knead until the dough forms a film. (Knead the dough by hand for at least 20 to 30 minutes)

Cover with plastic wrap and place a bowl of steaming boiling water at the bottom of the oven. Adjust the fermentation speed and ferment for 30 to 40 minutes, until the dough doubles in size. Poke it with your finger and it will not collapse or shrink.

Remove the dough and deflate, divide into four equal parts, cover with plastic wrap and let rest for 15 minutes.

Use a spoon to twist the durian meat into puree to form durian filling.

Prepare some blueberry jam. I plan to make a double flavor, and the fillings can be changed according to personal preference.

Take a piece of dough and roll it into a thin rectangular piece with a rolling pin.

Apply the filling, leaving 2 to 3cm unpainted on one of the long edges.

Cut the area without filling into small strips as shown in the picture with a knife. Roll up along the side with filling until it reaches the area without filling.

Roll the strips onto the long dough to create the shape of a caterpillar. Place the shaped dough into an oven with hot water at the bottom and ferment until doubled in size.

Brush the surface of the fermented dough with egg wash, and place it in a preheated oven at 180 degrees for 12 to 15 minutes until the surface is golden brown.

This is stuffed with durian. It is very convenient to cut it into sections and eat it directly.
