Stir-fried Asparagus and Shrimp
Overview
After a Chinese New Year with a lot of fish and meat, my tongue is almost numb. Recently, I always like to eat some light vegetables, and asparagus is one of them. Nowadays, asparagus is starting to be cheap, and it is tender and small. It is easy to handle and delicious to eat. Please try to buy fresh shrimp and peel it yourself. Peel the asparagus roots and cut into small sections of about 2.5 cm. If the asparagus is thick, cut it into small sections diagonally

Remove the heads and shells of the shrimps, cut them in half horizontally without cutting them, as shown in the picture (don’t throw away the shrimp heads and shells here, they will be used to make shrimp soup later)

Season the shrimps with a little salt, add egg white and mix well, set aside for later use

Put a little oil in the pot, heat it up, pour in the shrimp shells and heads, stir-fry until the color changes, add a small bowl of water to make shrimp soup, filter and set aside

Put a little more oil in the pot (as shown in the picture). The oil temperature is about 60% hot. Fry the shrimps in the oil until they are 5 mature. It will take a few seconds to heat up. Then filter the oil. Don’t worry about too much oil after passing through the oil. You won’t need to add any oil when frying the asparagus for a while, and the shrimp will indeed become much tenderer after passing through the oil

Pour the excess oil into a bowl, which can be used when frying the next dish. Use a little bit of the remaining oil in the pot, pour in the asparagus, stir-fry for a few times, then add an appropriate amount of shrimp stock, simmer for a while, pour in the half-cooked shrimp, continue to simmer, the shrimp will be cooked immediately, then add a little water starch, thicken the gravy, and remove from the pot
