This is a mirror carp given by a friend. She had already packed it when she gave it to me. So there are no pictures of the whole fish. The mirror carp was given by a friend. She had already packed it when she gave it to me. So there is no picture of the whole fish. Wash it repeatedly to remove the blood.

Cut into strips (if you prepare the fish yourself, just remove the bones and cut into strips)

Marinate with appropriate amount of salt, cooking wine, onion and ginger for 20 minutes

The fish sticks must be in clean water, and a thin layer of starch will stick to the surface. Be sure not to stick too much

Shake off the starch before adding to the pan. The oil temperature must be 70% hotter. Fry the fish sticks in batches. Do not fry them all at once. The oil temperature will drop and the taste will be affected.

Do not stack the fried fish sticks on top of each other on the plate, as the heat will soften the fish sticks. Spread the fried fish fingers one by one on the chopping board.

When the oil temperature rises again, fry the fish sticks in batches, remembering that the oil temperature should be high.
